DESCRIPTION
JAKU has low bitterness, floral high notes and a delicate, silky texture. As the flavour develops the floral sweetness gives way to soft, creamy umami undertones. Its finish is smooth and clean. Overall a gentle, refreshing flavour profile.
Produced by four friends, Yoshitaka, Shinya, Kosuke and Kazuhiko, young tea farmers all descending from established tea-growing families in and around Sonogi.
Grown on picturesque rolling hills facing Ōmura Bay, these tea plants have a constant, steady flow of cool air as they grow. This slows growth and results in a beautiful matcha with low bitterness, floral high notes and delicate silky texture.
JAKU is crafted with precision from cultivars Tsuyuhikari and Saemidori where this small production co-op from Nagasaki employs a traditional style brick furnace to dry the tencha.
This exceptional blend marries the vibrant, gentle sweetness of Saemidori with the light robust umami of Tsuyuhikari.

SERVING SUGGESTION
Hot Latte Preparation
Mix 3g sifted matcha with 50ml hot water. Whisk briskly in a "Z" motion for 15-20 seconds until frothy. Froth 200ml milk (oat or nut works well), then blend together gently and serve.
Iced Latte Preparation
Mix 3g sifted matcha with 50ml hot water. Whisk briskly in a "Z" motion for 15-20 seconds until frothy. Fill a glass with ice and 150ml milk (dairy or plant-based), pour in the matcha, stir well, and enjoy.
