Karigane refers to a type of tea made from the stems, stalks, and twigs that are a by product of processing Gyokuro tea leaves. While standard gyokuro consists primarily of the high-quality leaves from tea plants shaded for about 20-30 days before harvest, the stems and twigs, which have a different composition, are separated during production.
Our Gyokuro Karigane comes from Kyoto prefecture and has been shaded forabout 20 days before picking, causing the plants to develop more theanine, which leads to pronounced umami and sweetness.
The term "karigane" (雁が音) literally means "the call of a wild goose." According to tradition, the name comes from the resemblance between the shape of the tea stems, which float in water, and branches that wild geese might rest on during their migration—an image evoked by the tea’s appearance in the cup.
